Rosemary Potato Onion Pie

2T olive oil
1# red skinned potatoes sliced 1/4″ thick
1-2 medium onions, sliced
1t rosemary
6 eggs beaten
2/3 c applesauce
1 tart apple diced
1/2 c nutritional yeast flakes
salt and pepper to taste

(for next time, try adding bacon, sausage, or peppers)

Preheat oven to 375.
Saute potatoes, onion and rosemary until potatoes are tender and onion is translucent.

Combine eggs, applesauce, yeast, salt, and pepper.

Place potato and onion mixture with apples into a 9×9 baking dish, pour egg mixture on top, bake for 30-40 minutes until set in the center.

Serves 4, serve with spinach salad.

The kids gave this a thumbs up, Elliot cleaned his plate, and Lauren ate most of hers.

Elliot is 19lbs and a few ounces big.

Lauren is 30 lbs. I think he will weigh more than her pretty soon.

This morning I told Lauren I was going to get a clean diaper for Elliot, and I asked her if she needed a diaper too. She had been running around naked all morning, and she said “yes,” so I asked her if she’d like to make peepee on the potty first.

Her answer?

“No, but nice try though!”

Elliot and Lauren had checkups today with our new doctor.

Vital stats:

Lauren is 29 lbs with her clothing on, and Ryan thinks she is 31″ tall, but I’m pretty sure he just doesn’t remember what the nurse said when she measured Lauren. I’ll have to get my tape measure out tonight.

Elliot is HUGE. He’s now 10 lbs, 7 oz, and 22″ long, with a 40 cm. head. At the top of every chart.

Baby Names

Well it only took a few days, but we’ve named our son. We went back and forth and started over from scratch and kept at it, and finally, we’re pleased to announce that we’ve named him…

Elliot Andrew Wilkins

So a little recap, if you’d like…

Elliot was born on Wednesday, February 14, 2007 at 3:42 a.m. in the city of Chicago, IL. He was born at home, and weighed in at a whopping 9 lbs and 10 ounces, and a smidge short of being 22″ long. He has the longest fingers and feet that I have ever seen on a baby, they remind me of my Mom.

So far he’s been completely different from Lauren… he was different before he was born too. He was much quieter and kicked in a much softer way while he floated in my belly. Unlike his sister, he kept his presence subtly known, until he flipped breech the day after Christmas. He demanded all of my attention from that point until his birth, but in a quiet and noble way. And he did turn head down again, but not until adequate attention had been given to his growth and development.

Since his birth he has remained quiet and calm, sleeping a lot. His sister was wide awake and loud from the beginning, so this is not what I expected from another Wilkins baby. Today Lauren demonstrated this by spending several minutes trying to invert her eyelids in much the same way her Dad does when he makes ugly faces. She is also testing the limits of her physical prowess by climbing in all the places she isn’t supposed to go – like on Daddy’s desk and the TV cabinet. She is like the Energizer Bunny, she NEVER stops.

Elliot spends his days eating, sleeping, and pooping, and sleeping some more. He has Daddy’s ears and chin, and doesn’t seem to mind when we put a pink diaper on him. I’ve promised that we will go get him some blue clothing soon.

It’s a Valentine!

Baby boy was born this morning at 3:42 am, in the comfort of our home, with the help of a fabulous midwife (Sarah) to assist mom and dad, and doula (Leah) to assist Lauren.

Everyone is resting well this afternoon. Pictures to come this evening (and hopefully a name!)

9 lbs, 10 oz, 21 3/4″ long, with long skinny fingers and feet, and dark hair.

So our tiny little apartment is painted in “contractor white” – which I think is just one step above primer in the realm of paint. I’d like to paint a few walls here, but not entire rooms, and not with anything bright like Lauren’s bedroom was in Ohio, since we’ll have to unpaint it all before we move.

I really love the yellow we had in the living room in Ohio, and I think it would work really well on the small walls in our living/dining room here too, so maybe in a few weeks I can talk Ryan into helping me paint it (*ahem* he’ll paint while I supervise). In the meantime, I’ve been busy adding as many pictures and frames and prints to the walls as I can, since a little spackle will fix the nail holes in all the walls.

Poor Lauren, she has this very adult set of bedding (it was our master bedroom set before we bought the king size bed) that is lilac and well, not very fun if you are two. She doesn’t seem to mind much, but add that to a boring “contractor white” room with one window and not much furniture, and it’s not really a happy place to play.

So tonight I framed a ton of photos that Ryan and I have taken in the last few years.. some usual and some unusual, from all over the world. There are pictures from Hawaii and Ohio, Kansas, Germany, Colorado, Wyoming, and who knows where else!

If you’d like to see the real image on any of these, I’ll have to set up some links. I know there is a way! The only picture we didn’t take is the one of Ryan in the red frame when he was little. When I ask Lauren who is in the picture, she says it’s Lauren. :)

I want coffee!

After lunch today Lauren was running around drinking her juice and playing, and I sat down on the couch with a cup of coffee… she looked at me with BIG eyes and walked over and stood very quiely and stared at me. And kept staring. And then as quiet as a mouse, she whispered, “I want coffee,” and I shook my head NO. The rest of our conversation went something like this:

*whispering* I want coffee.
*shake head no*
*whispering* I waaaaant coffeeeeeeeee.
*shake head no*
*WHISPERING* I waaaaaaaaaaaaaant coffffffffeeeeeeeeeeeee!
*shake head no*
*talking softly* I want coffeeeeeeeeeeee!
*shake head no*
*talking* I want coffFEEEEEEE!
*whispering* NO not now.
*talking* I WANT coffeeeeeeeee!
*talking* no
*talking* not right now

By this point I had finished my cup, so I gladly handed it over. She was thrilled and said, “thank you!”
